Suju Dining is a lively, comfortable dining bar - basically a fancy izakaya - that serves excellent food and drink from Nagano-ken. It's a great place to try out different sakes from that prefecture, and they offer a range of limited-time seasonal bottles every month to supplement their very solid day-to-day selection.
Beautiful vegetables straight from Nagano farms are one of the highlights here. Green beans and seasonal vegetables with walnuts are fresh and crunchy, with a subtly restrained miso dressing. The three-part seasonal vegetable appetizer is a taste of the countryside, and always worth a try. There are also tempting tofu-based starters like tofu with coriander, or plain tofu served with assorted condiments.
Miso-marinated grilled dishes are another specialty of the kitchen, and the gindara (black cod) prepared in this style is superb. Likewise, salmon belly is grilled with precision to produce optimally crunchy skin while maintaining moistness within. Ochazuke with plum, mentaiko or salmon is a pleasant way to end the meal, assuming you're not already completely full.
In addition to the big sake selection, the drinks list also offers beer, shochu, and several wines by the glass or bottle. Original cocktails include Home-made Ginger Highball and the intriguing Blueberry and Black Vinegar Sake Fizz.
Service is friendly and efficient, and staff are happy to advise you on your sake choices. The dining room is quite spacious, with a decent amount of space between tables, plus a couple of counters where you can watch the chefs at work. Budget around Y7,000-9,000 for food and drink at dinnertime.
Note that there are no English-language menus. Prix-fixe menus, starting at around Y6,000 in the evening, are available if you want to simplify the ordering process.
