Butcher Republic specializes in original deep-dish pizzas along with grilled meats and craft beers. There's outdoor terrace seating, and like much of LaLaport Toyosu, dogs are welcome.
The pizzas here are well prepared and fairly hefty. Tomato-based varieties like the Chicago Classic are filled with a thick tomato sauce loaded with both traditional and non-traditional ingredients like cherry tomatoes, cheese, salami, mini meatballs, herbs and spices. The Hot Chicago is packed with bacon and jalapenos, with a balanced spiciness that provides a kick but isn't too overwhelming.
Other pizza varieties here are Vegetable, Pulled Pork BBQ, Chicago Cheese Republic, and American Shrimp. The menu also features meaty main dishes like Roast Cajun Chicken, Roast Garlic Chicken and seven types of grilled sausage. Note that pizzas take around 20-30 minutes from the time you order.
Attached to the restaurant is a branch of Belgian beer bar Belg Aube, so you can order Belgian beers by the bottle as well as several craft beers on tap from Tokyo's Rio Brewery. Budget around Y4,000-5,000 at dinnertime for food and drink.
