One of two Fukuoka-based ramen shops that have gone on to international fame, Ippudo serves thin, slightly chewy noodles in a pork-based broth ("red" or "white"), with or without extra chashu. You can add your own freshly grated garlic -- you'll find bowls of whole garlic cloves on the counter along with graters.
