This 24-hour noodle shop is the flagship of Japan's most popular ramen chain, and one of Fukuoka's two internationally famous ramen brands (the other one is Ippudo). Ichiran is well known for their creamy tonkotsu (pork bone) broth and their thin, firm noodles. They are also quite proud of their original aged chili-pepper sauce, made from thirty different ingredients.

When you arrive at the shop you'll be handed a detailed form to fill out, where you can customize everything from the richness of your broth to the texture of your noodles. You can also specify the amount of spicy sauce, the amount of garlic and green onions, and whether or not you want sliced pork. Optional toppings and extra noodles are also available.
